Chicken and Carrot with Soy Sauce & Rice Vinegar Dressing

Here’s another simple and healthy dish that I enjoy making at home. It’s light, flavorful, and very easy to prepare. The soy sauce and rice vinegar dressing gives the chicken and carrots a nice sweet-and-tangy flavor, while the chili adds a little kick.

Ingredients:

  • 1 chicken breast, cut into bite-sized pieces
  • 1/2 carrot, sliced into long, thin strips
  • 2 cloves garlic, chopped
  • Green onion leaves, chopped
  • Chili pepper, sliced
  • Sesame seeds
  • Soy sauce
  • Rice vinegar
  • 1 liter water, for cooking the chicken
  • 1 tablespoon cooking oil, for sautéing the carrots
  1. Cook the chicken
    Bring 1 liter of water to a boil and cook the chicken until completely cooked. Once done, remove the chicken from the pot and set it aside.
    Don’t throw away the chicken broth! We’ll use a little of it for the carrots.
  1. Cook the carrots
    Heat 1 tablespoon of cooking oil in a frying pan. Add the sliced carrots and chili pepper, then sauté for a few minutes.
    Add about 3 tablespoons of the chicken broth and continue cooking until the carrots are tender but still have a little crunch.
  1. Make the dressing
    In a small bowl, mix together soy sauce, rice vinegar, and chopped garlic. You can adjust the amount according to your taste.
  1. Put everything together
    Arrange the cooked carrots and chicken on a serving plate. Pour the soy sauce and rice vinegar dressing over them.

Top with chopped green onion leaves and a sprinkle of sesame seeds.
