Pan-Fried Smelt Fish (Shishamo) Without Oil

Here in Japan, smelt fish with roe, called shishamo, are easy to find and very popular. They are delicious grilled or pan-fried, and they’re one of my children’s favorites. I especially love eating them with mayonnaise!

When I cook shishamo, I don’t use any cooking oil. Instead, I use cooking paper (parchment paper). I simply trim the edges into a round shape so it fits perfectly inside my frying pan without sticking out. This keeps the paper safely inside the pan.

I arrange the shishamo in a single layer on top of the cooking paper and cook them over medium heat. Once one side is nicely cooked, I carefully turn them over and cook the other side.

When they’re done, I arrange them on a plate and add a little parsley for garnish, with mayonnaise on the side. Simple, delicious, and ready to enjoy!

No cooking oil, less mess, and the frying pan is much easier to clean afterward. Easy, tasty, and a little healthier, too!
