I’m lucky to have neighbors nearby who grow their own vegetables. They have a little self-service vegetable stand where you just put a coin in the box and take whatever vegetables you like. The vegetables are much cheaper than at the supermarket, 100-150 yen each, and they’re fresh and naturally grown. I bought green bell peppers today. I also bought eggs from a nearby egg farm, so they were super fresh too. I really love being able to get fresh ingredients from places close to home!
I now have some green bell peppers and eggs, and I thought, why not put them together with some cheese?


I chopped the hard-boiled eggs and mixed them with chopped onion, parsley, mayonnaise, a little ketchup, salt, and pepper. I cut the bell peppers in half and removed the seeds, then filled them with the egg mixture.


For the finishing touch, I sprinkled some powdered cheese on top and put everything in the toaster oven until the cheese turned golden brown.


It was so easy to make, and honestly, it turned out really delicious! The bell pepper is slightly sweet and fresh, while the creamy egg filling and golden cheese make every bite satisfying.
I always enjoy recipes like this—nothing fancy, just simple ingredients that come together into something good.
