Ingredients:
String beans
Japanese miso
Ground sesame seeds
Mirin
Sugar or your preferred sweetener
A little water
How I Make It
First, snap the string beans by hand into pieces about 3–4 cm long. I like doing this by hand because it’s quick and easy.



Bring a pot of water to a boil and add the string beans. Cook them until they are just tender, but don’t overcook them. I like them to still have a little crunch. Immediately transfer the cooked string beans into ice water to stop the cooking process and help keep their fresh color and texture. Drain the string beans well and place them in a bowl.



In a small bowl, combine the miso, ground sesame seeds, mirin, sugar or sweetener, and a little water. Mix everything well. Pour the miso mixture over the string beans and gently toss until all the beans are nicely coated.


That’s it! A very simple and delicious side dish that goes well with almost any meal. Easy to make, flavorful, and a great way to enjoy fresh vegetables. 🌿
