Eggplant is delicious, especially when fried and served with grated ginger and soy sauce. It’s such a simple and tasty dish to enjoy with a bowl of rice.
When I fry eggplant, I don’t use too much oil. Just 1–2 tablespoons, depending on how much eggplant I’m cooking. The important thing is to use just enough oil to lightly coat the sliced surface.


First, I place the sliced side of the eggplant onto the frying pan with the oil, just enough for it to pick up some oil. Then I immediately flip it over and start frying the skin side. Once the skin side is cooked, I flip it again and cook the sliced side until tender.


When it’s done, I simply put the fried eggplant on a plate, add some grated ginger on the side, and drizzle soy sauce all over the eggplant. You can also dip each bite into soy sauce with a little grated ginger as you eat.
With just fried eggplant, you already have a delicious and inexpensive dish to go with rice. 😊
Sometimes, when I’m too lazy to go shopping and cook a complicated meal, I’ll walk around the supermarket thinking about what to buy. Then, as soon as I see some eggplant, I already know what we’re having for dinner. 😂
